Robert Daleski is the founder of Pimiento Sandwiches, a Detroit-area concept rooted in bold, Mediterranean-inspired flavors and simple, thoughtful preparation. Hand-crafted, pre-packaged, and sold exclusively through The Pavilion Street Market in Ferndale, Pimiento offers chef-driven sandwiches that are fresh, balanced, and ready to go whenever you are.
With more than three decades in hospitality, Daleski brings a deep understanding of flavor, ingredient quality, and guest experience. Pimiento reflects a culinary perspective shaped by the Mediterranean—bright herbs, layered textures, and clean, vibrant combinations—translated into a convenient, uniquely flavorful sandwich.
The venture continues a throughline in Daleski’s career: creating food people crave and return to. Known for building loyal followings and delivering consistently thoughtful service, he has long focused on how details—ingredients, seasoning, and presentation—come together to shape a memorable experience.
Daleski remains active in Detroit’s restaurant community while developing Pimiento, drawing on his background in beverage programs, operations, catering, and hospitality. His work has earned recognition as Best Bartender in Detroit by HOUR Magazine.
